While baking might seem counterintuitive during warmer months, there are those days – especially after weeks of gloomy, rainy weather – when all you crave is the comforting warmth of a roasted dinner. This recipe perfectly fits the bill, requiring only about 45 minutes in the oven and, critically, just one sheet pan to clean. The combination of bright lemon, earthy thyme, and pungent garlic infuses the entire dish, bringing a delightful freshness that invigorates both your palate and your spirits. This is not just a meal; it’s a moment of culinary comfort and simplicity.

The Magic of Marination: Your Secret to Flavorful Chicken

The true secret behind any exceptional one-sheet-pan chicken dinner lies in the marination. It’s the step that transforms simple ingredients into something extraordinary. For this recipe, I swear by a gallon-sized zip-top bag. It’s the perfect vessel for allowing all those incredible flavors – olive oil, lemon juice, za’atar, and garlic powder – to deeply penetrate both the chicken and the potatoes. You can marinate the chicken for a minimum of 20 minutes, or if you’re planning ahead, leave it overnight for an even richer taste. If you opt for an overnight marinade, simply add the potatoes to the bag a couple of hours before you plan to roast everything. This foresight allows you to prep your Za’atar chicken on a Sunday, ready to pop into the oven for a quick, impressive weeknight dinner. Imagine serving a gourmet-level roasted chicken on a Monday while others are stuck with cold cereal or boring leftovers – talk about having your life together!

Perfecting the Potatoes: Crispy on the Outside, Tender on the Inside

For this recipe, I typically use small red baby potatoes, cut in half, to achieve that desirable crunch on the outside while maintaining a soft, tender interior. However, you have plenty of flexibility! Feel free to substitute with Yukon Gold or even sweet potatoes if those are what you have on hand. The key to evenly cooked potatoes is consistent sizing. If you’re working with larger potatoes, be sure to cut them into roughly 1-inch pieces. This ensures they cook thoroughly alongside the chicken within the specified time. Should your potato pieces be larger, you might need to remove the chicken once it’s cooked through (165ºF internal temperature) and allow the potatoes an additional 5-10 minutes in the oven to reach optimal tenderness and crispness.

Decoding Za’atar: The Star of the Show

While most ingredients for this dish are kitchen staples – olive oil, lemon juice, garlic powder, salt, and pepper – the one star that might be new to some is za’atar. This exquisite Middle Eastern spice blend is a cornerstone of Mediterranean cuisine, renowned for its complex yet harmonious flavor profile. Typically, za’atar consists of a delightful mix of dried thyme, marjoram, oregano, toasted sesame seeds, and tart sumac. The thyme and oregano provide an earthy, savory base, the sesame seeds add a nutty crunch, and the sumac contributes a unique lemony tang that brightens the entire blend. It’s truly a game-changer for roasted meats and vegetables.

If you’re having trouble locating za’atar in your regular grocery store, don’t despair! It’s readily available at Middle Eastern or Mediterranean specialty stores, and you can also easily find it online here. Once you have a jar, you’ll discover countless ways to use it. One of my personal favorites is a simple dip: mix ¼ cup of olive oil with a pinch of sea salt and a generous amount of za’atar seasoning. It’s an incredibly flavorful and quick dip for warm pita bread – honestly, one of my top go-to snacks.

A Meal for Everyone

This One-Pan Za’atar Chicken and Potatoes dinner was a gigantic hit with my husband. He couldn’t stop raving about how wonderfully tender and juicy the chicken was, a testament to the effective marination. And for me? I loved not only the delicious dinner but also the blissfully easy cleanup afterward. The fact that he could enjoy his preferred dark meat pieces while I savored the bone-in white meat made it a perfect meal tailored to both our tastes. This whole za’atar roasted chicken dinner concept truly has it all: incredible flavors, minimal effort, and fewer dishes to wash. It’s a win-win-win in my book.

A one sheet pan roasted za’atar chicken and potatoes dinner. Chicken crusted with za’atar spices, olive oil, garlic and lemon juice. I toss it all into a zip-top bag and give it a good shake before baking it. It’s a crowd pleaser.

One Sheet Pan Roasted Za'atar Chicken and Potatoes

Ingredients

  • 6-8 pieces of bone-in, skin on chicken (thighs, breasts, drumsticks)
  • 6 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2-3 tablespoons za’atar
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 16 ounces red baby potatoes, halved (see notes)
  • fresh thyme, optional

Instructions

  1. Position a rack near the center of the oven and preheat the oven to 400ºF. You can line a sturdy baking sheet with heavy duty foil for easier clean up if you’d like.
  2. Combine the olive oil, lemon juice, 2 tablespoons of za’atar seasoning, and garlic powder in a zip-top bag. Give the marinade a taste. If the seasoning is salt-free like mine was, add in 1 teaspoon or as desired. Add the chicken pieces and the potatoes to the bag. Seal the bag and give it a good shake so the marinade evenly coats the chicken and potatoes. Allow the chicken and potatoes to marinate for 20 minutes or up to 3 hours (see notes).
  3. Spread the chicken and potato pieces out onto the prepared baking sheet. Sprinkle the remaining tablespoon of za’atar on the chicken and potatoes. You could even sprinkle some chopped fresh thyme on top if you’d like.
  4. Bake the roasted za’atar chicken for 35-45 minutes or until the internal temperature registers 165ºF, you may need to turn the baking sheet half way through the baking if your oven has heat spots. Sprinkle with fresh parsley and lemon slices or wedges, serve warm.

Notes

  • Make ahead: The chicken can be marinated up to 12 hours in advance. If you decide to do that, add the potatoes 20 minutes-3 hours before baking.
  • POTATOES: You can swap out the baby red potatoes for Yukon golds or even sweet potatoes if you’d like. Make sure to cut the potatoes into 1-inch pieces so that they cook evenly in the time allotted for the chicken. Larger pieces will not cook in the time and you will have to remove the chicken and continue roasting.
