One Skillet Chicken with Tomato Basil Cream Sauce

Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • salt and pepper
  • 1 cup chicken broth
  • ¼ cup sun-dried tomato basil pesto (homemade or store bought)
  • 1 tablespoon minced garlic
  • ½ teaspoon red pepper flakes (or more to taste)
  • 1 tablespoon olive oil
  • ⅓ cup diced red onions (or shallots)
  • 1 tablespoon salted butter
  • ½ cup heavy cream
  • 1 tablespoon capers (optional, but highly recommended!)
  • 2 tablespoon chopped fresh parsley or basil

Instructions

  1. Using a meat mallet, gently pound down the chicken breasts or thighs into a uniform ½ inch thickness. This ensures even cooking. Season both sides generously with salt and freshly ground black pepper.
