Why These Cilantro Lime Shrimp Kabobs Are Your New Summer Favorite

If I had my way, the grill would be my primary cooking appliance year-round. While some beloved dishes, like pasta, aren’t exactly grill-friendly, these versatile shrimp skewers pair beautifully with almost anything – even pasta! My personal favorite way to enjoy them is nestled on a crisp bed of crunchy cabbage slaw, lightly dressed with an Asian sesame vinaigrette. The combination of textures and flavors is simply divine, offering a refreshing contrast to the warm, zesty shrimp.

These grilled cilantro lime shrimp skewers are more than just a meal; they’re an invitation to effortless summer living. Their simplicity belies their incredible depth of flavor. The vibrant citrus from the lime, the fresh, herbaceous notes of cilantro, a hint of heat from red pepper flakes, and a touch of sweetness all come together to create a marinade that transforms ordinary shrimp into an extraordinary delight. It’s a healthy, lean protein option that cooks in minutes, making it perfect for those busy evenings when you want something satisfying without spending hours in the kitchen.

Endless Serving Possibilities for Your Shrimp Skewers

One of the most remarkable aspects of these super simple shrimp kabobs is their incredible versatility. There isn’t just one right way to enjoy them; they beautifully complement a wide array of dishes, making them a true game-changer in your culinary repertoire. Here are just a few inspiring ways to savor every delicious bite:

  1. On a Bed of Slaw: As mentioned, serving them over a crisp slaw salad with an Asian sesame dressing and crunchy wonton strips is an absolute winner. The cool, crisp texture of the slaw perfectly balances the warm, tender shrimp.
  2. Vegetable Skewers: Elevate your grilling experience by adding colorful vegetables directly to the skewers alongside the shrimp. Zucchini slices, vibrant bell peppers (red, yellow, or orange), and sweet onions are fantastic choices that cook beautifully on the grill with the shrimp.
  3. Pair with Exotic Salads: They are an ideal protein boost for a vibrant salad, such as a Thai salad with peanut lime dressing, adding a new dimension of flavor and substance.
  4. Burrito Bowls: Create incredible homemade burrito bowls by serving the shrimp over a bed of fluffy garlic rice, topped with your favorite fixings like black beans, corn salsa, avocado, and a dollop of sour cream or Greek yogurt.
  5. Taco Night Transformation: These shrimp are absolutely spectacular in tacos! Drizzle them with a homemade chipotle mayo for an extra kick. They also make a fantastic substitute for fish in your favorite fish taco recipe, offering a lighter, equally flavorful option.
  6. Quinoa Power Bowls: For a nutritious and satisfying meal, arrange the grilled shrimp over a bed of quinoa with an assortment of extra roasted or steamed vegetables on the side.
  7. Perfect Party Appetizers: Cut the shrimp into smaller pieces (if large) and serve them as elegant and easy appetizers for your next gathering. They’re always a crowd-pleaser and disappear quickly!

Truly, the culinary possibilities with these cilantro lime shrimp are boundless. Let your creativity guide you!

The Dynamic Duo: Cilantro and Lime

Cilantro and lime are a flavor match made in culinary heaven. This iconic pairing elevates virtually any dish it touches, infusing it with unparalleled freshness and zest. For these grilled shrimp, the combination is simply magical. The bright, tangy notes of lime cut through the richness of the shrimp, while the distinctive, herbaceous aroma of fresh cilantro provides a refreshing counterpoint. Together, they create a marinade that is both bold and balanced, perfectly complementing the natural sweetness of the shrimp.

At Little Spice Jar, our recipes are renowned for their BOLD flavor profiles, and this cilantro lime shrimp is no exception. We incorporate a hint of red pepper flakes to add a subtle, warming heat, and a touch of sugar (or honey) to enhance the shrimp’s inherent sweetness, creating a perfectly balanced taste sensation. It’s all about using simple, fresh ingredients to bring incredible flavor to everyday food, making every bite a delightful experience.

Customizing Your Flavor Profile: A Simple Swap

While cilantro and lime are star ingredients, we understand that not everyone is a fan of cilantro (and yes, we still love you!). If you fall into this camp, don’t despair – this recipe is easily adaptable. Simply replace the fresh cilantro with an equal amount of freshly chopped parsley. When making this substitution, it’s also a good idea to swap the lime juice for lemon juice, as the brighter, slightly sweeter flavor of lemon tends to harmonize beautifully with parsley. This simple tweak will create a delicious variation with a similar vibrant and fresh flavor profile, ensuring everyone can enjoy these fantastic grilled skewers.

Tips for Grilling Perfect Shrimp Skewers

Achieving perfectly grilled shrimp is easier than you think, and a few simple tips can make all the difference:

  1. Don’t Overcrowd the Skewers: Leave a little space between each shrimp on the skewer. This allows for even cooking and ensures each piece gets a good char.
  2. Pre-soak Wooden Skewers: If using wooden skewers, soak them in water for at least 30 minutes before threading the shrimp. This prevents them from burning on the grill. Metal skewers are also a great reusable option.
  3. High Heat, Quick Cook: Shrimp cook very quickly. You want a medium-high to high heat on your grill to get a nice sear without overcooking the shrimp, which can make them tough.
  4. Watch for Color Change: Shrimp are done when they turn opaque pink and curl into a ‘C’ shape. An ‘O’ shape indicates overcooked shrimp. This usually takes only 2-3 minutes per side.
  5. Indoor Grilling Option: No outdoor grill? No problem! An indoor grill pan or a George Foreman grill works wonderfully, cooking the shrimp just as efficiently and deliciously.

So, what are you waiting for? Head to the grocery store and grab a few pounds of extra-large or jumbo shrimp. Trust me, you’re going to want plenty of these on hand! Whether you’re facing a rainy week (like us in Houston!) or enjoying glorious sunshine, these little guys are a guaranteed ray of sunshine for your palate. Did I mention they’re light on the waistline too? That’s right – guilt-free deliciousness!

I’m planning on enjoying these delightful cilantro lime shrimp daily. Yes, please, and thank you! They are the epitome of an easy, flavorful, and healthy meal, perfect for any occasion.

Easy grilled cilantro lime shrimp skewers that are perfect for the summer time. These shrimp kabobs are so EASY to make and so flavorful! They require less than 10 ingredients and take just 10 quick minutes of prep work!

Grilled Cilantro Lime Shrimp Skewers

Ingredients

  • 1 1/2 – 2 pounds extra large shrimp, deveined (shell on or off, either is fine)
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon salt
  • 2 cloves garlic, grated
  • 1 tablespoon sugar (or honey)
  • 1/4 – 1/2 teaspoon red pepper flakes (according to preference)
  • 1 tablespoon oil

Instructions

  1. In a medium-sized bowl, combine all the marinade ingredients: lime juice, chopped cilantro, salt, grated garlic, sugar (or honey), red pepper flakes, and oil. Whisk well to ensure the sugar fully dissolves, creating a cohesive marinade. Add the deveined shrimp to the bowl, tossing gently to ensure each shrimp is thoroughly coated. Cover the bowl and refrigerate, allowing the shrimp to marinate for at least 30 minutes, or up to 3 hours, for optimal flavor infusion.
  2. Once marinated, thread the shrimp onto skewers, being careful not to overcrowd them. Preheat your outdoor grill to medium-high heat. Place the shrimp skewers on the hot grill and cook for 2-3 minutes per side, or until the shrimp turn opaque pink and are cooked through. If using an indoor grill or grill pan, cook for a total of 2-3 minutes, flipping halfway through. Serve immediately and enjoy!

Notes

  • If you aren’t a huge fan of cilantro, just simply replace it with freshly chopped parsley. Swap out the lime juice for lemon juice as the flavor of parsley tends to go better with lemons. That will add a slight variation to the recipe but with similar flavor profiles.
  • You can also add sliced zucchini, onions, and bell peppers to the shrimp kabobs for added flavor and texture.
  • Other serving suggestions: On a bed of rice, over a salad, or in tacos. See the main blog post above for more delicious suggestions.
