There’s nothing quite like the arrival of summer to awaken our cravings for fresh, vibrant fruit desserts. Today, we’re celebrating the season with a super summery Blueberry Peach Crisp – a truly delightful treat that captures the essence of warm, sunny days in every spoonful. This recipe highlights that magical time of year when farmers’ markets and produce aisles are overflowing with the most succulent berries and peaches, painting a colorful picture with their beautiful hues.

I eagerly anticipate this small window of deliciousness, waiting for berries to reach their peak sweetness and prices to be at their best, and then it’s a full-on berry frenzy in my kitchen! Whether you’re in Houston, where the sun finally decides to show up and temperatures flirt with triple digits, or anywhere else basking in the summer glow, a warm, cozy bowl of bubbly blueberry and peach crisp is the perfect antidote. The Simplicity and Charm of a Classic Crisp

The most wonderful thing about a classic fruit crisp, whether it’s blueberry, peach, or a glorious combination of both, is its incredible ease of preparation. It’s truly one of those “dump and go” recipes that requires minimal effort but yields a dessert that can effortlessly feed a crowd. This particular crisp strikes the perfect balance – it’s sweet enough to satisfy your dessert cravings but not overly so, making it an ideal candidate for pairing with a generous scoop of vanilla ice cream. In our house, adding ice cream is not just an option, it’s an absolute *must-do*! Honestly, why would anyone eat a warm crumble or crisp without the cool, creamy contrast of melting ice cream? It feels like a cardinal sin to skip it.

This delightful recipe is comprised of just two simple, yet extraordinarily flavorful components:

  1. **The Juicy Fruit Base:** This part brings together fresh, ripe blueberries and perfectly diced peaches. These vibrant fruits are gently tossed with a hint of bright lemon juice, some rich brown sugar, and just one tablespoon of cornstarch. The lemon juice brightens the flavors and prevents the fruit from being too cloyingly sweet, while the cornstarch works its magic to create that luscious, bubbly, and slightly thickened fruit filling that we all adore.
  2. **The Irresistible Oat and Pecan Crumble Topping:** This is where the magic truly happens, transforming simple ingredients into a salty, sweet, and utterly out-of-this-world delicious streusel. It features coarsely chopped pecans (or walnuts if you prefer, for a slightly different nutty profile!), cold butter cut into cubes, warm cinnamon, more brown sugar for depth, a little all-purpose flour to bind it, and last but certainly not least, hearty rolled oats for that signature crisp texture. I particularly love adding a touch of cinnamon to my blueberry peach crisps; it infuses the entire dessert with such a wonderful, comforting hint of spice, elevating the fruit flavors beautifully.

Let’s be honest, a warm bowl of sweetened, bubbly fruit, topped with a crunchy, cinnamony crumble, and finished with a melting scoop of cold vanilla ice cream is truly all you need in life to achieve a moment of pure bliss. Are you picturing that vanilla ice cream slowly yielding to the warmth of the crisp, creating creamy rivulets that mix with the fruity goodness? I’m absolutely obsessed! ♥

The oats provide that satisfying crunch, while the blueberries burst with sweet juiciness. Indeed, all things purple and golden are exceptionally pretty, especially when they come together in such a delectable dessert. This peach crisp makes me feel all sorts of special, and you can bet we polished off a generous plateful of this incredible stuff in less than 120 seconds after the photoshoot was over. It’s just that good!

Tips for the Best Blueberry Peach Crisp

  • **Choosing Your Fruit:** Always opt for fresh, ripe blueberries and peaches. Ripe peaches should have a fragrant aroma and yield slightly to gentle pressure. If using frozen fruit, there’s no need to thaw; simply toss with the other fruit ingredients and consider adding an extra teaspoon of cornstarch to absorb any excess moisture.
  • **Preparing Peaches:** You can peel your peaches for a smoother fruit filling, or leave the skins on for added texture and nutrients – it’s entirely up to your preference! If peeling, a quick blanch in boiling water for 30 seconds followed by an ice bath will make the skins slide right off.
  • **The Crumble Perfection:** Ensure your butter is cold and cut into cubes when making the crumble. This is key to achieving that wonderfully crumbly, streusel-like texture. If the butter is too warm, it will blend too much with the dry ingredients, resulting in a less textural topping. Don’t overmix the crumble in the food processor; a few pulses are all you need to combine the ingredients while keeping it wonderfully coarse.
  • **Baking for Success:** Keep an eye on your crisp as it bakes. You’re looking for a golden-brown, crispy topping and a fruit filling that is visibly bubbling around the edges. If the topping starts to brown too quickly, simply tent it loosely with aluminum foil to prevent over-browning while the fruit continues to cook through.
  • **Cooling is Crucial (Almost!):** While tempting to dive in immediately, letting the crisp cool for about 5-10 minutes allows the fruit filling to set slightly, making it less runny and more enjoyable. It will still be warm enough to perfectly melt that vanilla ice cream!

An easy and delicious peach crisp! I mix up blueberries and peaches and top them with a buttery streusel-style topping. Delicious on its own or extra yummy with a little vanilla ice cream!

Delicious Blueberry Peach Crisp served warm in a bowl with melting vanilla ice cream.

Ingredients

For the Blueberry and Peaches:

  • 24 ounces (~ 4 cups) fresh blueberries
  • 5-6 medium fresh peaches, diced
  • 1/3 cup light brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For the Oats and Pecan Crumble:

  • 3/4 cup chopped pecans
  • 5 tablespoons cold butter, cubed
  • 1/2 teaspoon cinnamon
  • 2/3 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup rolled oats

Instructions

  1. **Prepare Oven:** Position a rack in the center of the oven and preheat the oven to 375ºF (190ºC).
  2. **Mix Fruit Filling:** In a medium bowl, combine the fresh blueberries, diced peaches, light brown sugar, lemon juice, and cornstarch. Toss gently until the fruit is evenly coated. Spread this delicious fruit mixture evenly into a square baking dish (an 8×8 inch dish works perfectly for this recipe).
  3. **Make Crumble Topping:** Add the chopped pecans, cold cubed butter, cinnamon, light brown sugar, all-purpose flour, and salt into a food processor. Pulse 2-3 times until the mixture is crumbly and resembles coarse meal. Stop the mixer, add in the rolled oats, and pulse an additional 2-3 times, just until the oats are incorporated and the crumble still has a nice texture. Be careful not to overmix. Sprinkle this irresistible crumble mixture evenly over the blueberry and peach base in the baking dish.
  4. **Bake to Perfection:** Bake for 25-35 minutes, or until the oats and pecan crumble topping turns beautifully golden brown and the fruit filling beneath is visibly bubbling around the edges. If your crumble starts to brown too much before the fruit is bubbly, tent it loosely with a piece of aluminum foil to protect it. (I covered mine at 25 minutes and let it bake for a total of 35 minutes). Let the crisp cool for about 5 minutes before serving with a generous scoop of creamy vanilla ice cream. Enjoy your homemade summer dessert!
