My search for a twin sister to Isla Mujeres’ incredible version took me far and wide, but nothing quite measured up. The closest I came was just last week, at a tiny gelateria in San Antonio called Rio de Gelato. Creamy coconut popsicles that are so coconuty! These coconut cream popsicles are made with less than 5 ingredients and no artificial flavors! The perfect treat for a hot summer day!
Ingredients
- 1 (13.5 oz can) full fat coconut milk
- 1 cup sweetened shredded coconut flakes
- 1 (14 oz can) sweetened condensed milk
- 1 cup heavy cream

- Popsicle Mold
Instructions
- Combine the coconut milk, shredded coconut, condensed milk, and heavy cream in a blender and blend until all the ingredients are mixed and the mixture is smooth. Pour the mixture evenly into each popsicle mold. (I used these). Insert the sticks immediately if your mold has slots for them. If your mold does not, freeze the popsicles for 2 hours or until they are semi-firm, then carefully insert wooden sticks into the center of each. Continue to freeze for at least an additional 4 hours, though overnight is truly best for optimal firmness.
- To easily remove the frozen popsicles from their molds, simply run the base of the mold under warm water for 10-15 seconds. This will slightly loosen the popsicle, allowing it to slide out effortlessly.

- TROPICAL VARIATION: You can also turn these coconut popsicles into vibrant tropical treats by using a small bullet blender to puree about 1/2 cup of fresh pineapples and then, separately, blend 1/2 cup of fresh strawberries. To create beautiful layers, drop a tablespoon of the pineapple blend into your molds, followed by a layer of the creamy coconut mixture. Then add a tablespoon of the strawberry mix and finally, finish it off with a little more coconut cream.
