These scones are so much better than any chain coffee shop version. The warm citrus glaze on top ties the whole thing together, creating a truly irresistible treat.

Cranberry Orange Scones with Pistachios

Ingredients

  • 2 cups all purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon orange zest
  • ½ cup butter, frozen + grated*
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup + 2 tablespoons heavy cream, divided
  • ¼ cup sour cream
  • ½ cup dried cranberries
  • ¼ cup chopped pistachios
  • sparkling or turbinado sugar, for sprinkling on tops

Glaze:

  • 1 cup confectioners sugar
  • ½ teaspoon vanilla extract
  • 2-3 tablespoons orange juice

Instructions

  1. Position a rack in the center of the oven and preheat the oven to 400ºF (200ºC). Line a baking sheet with parchment paper, then set aside.
  2. In the bowl of an electric mixer fitted with the paddle attachment (or a large regular bowl with an electric mixer), combine the flour, granulated sugar, baking powder, baking soda, salt, and orange zest. Stir briefly to ensure everything is well combined.
  3. Add the grated frozen butter to the dry ingredients. Mix on a low setting until the butter is fully incorporated into the flour mixture, forming a coarse meal. Continue mixing on low while gradually drizzling in each of the following ingredients separately: vanilla extract, the large egg, ¼ cup of the heavy cream, and the sour cream. Mix until just combined – do not overmix. Finally, gently fold in the dried cranberries and chopped pistachios until they are evenly distributed throughout the dough.
  4. Lightly flour your work surface and your hands before carefully removing the dough from the mixing bowl. Gently work the dough into a neat 10-inch (25 cm) circle. Using a sharp knife or a dough scraper, cut the circle into 8 equal wedges. Place the scones on the prepared baking sheet, spacing them 1 ½ – 2 inches (4-5 cm) apart. Brush the tops of the scones with the remaining 2 tablespoons of heavy cream and sprinkle generously with sparkling sugar (or turbinado sugar) if desired for extra crunch and sparkle.
  5. Bake the scones for 19-22 minutes, or until they are lightly golden brown and cooked through. Remove them from the oven and allow them to cool on the baking sheet for several minutes. While the scones are cooling, prepare the glaze: In a small bowl, combine the confectioners’ sugar, vanilla extract, and 2 tablespoons of orange juice. Whisk until smooth and lump-free. If the glaze appears too thick, you can slowly drizzle in the remaining tablespoon of orange juice, adding 1 teaspoon at a time, until it reaches your desired consistency. Drizzle the warm citrus glaze generously over the cooled scones and, if you like, top with a little more sparkling sugar for garnish.

  • For the absolute best flavor and texture, scones are best enjoyed the same day they are baked. However, any leftover scones will keep well in an airtight container at room temperature for 1-2 additional days.
  • HOW TO GRATE BUTTER: The secret to truly flaky scones lies in cold butter! For optimal results, I recommend freezing your butter overnight. If you’re short on time, freezing it for several hours before grating will also work. Use a box grater (the coarse setting is ideal) to grate the frozen butter into a bowl or onto a plate. Place the grated butter back in the freezer for a few more minutes to ensure it’s thoroughly chilled before incorporating it into your recipe. This prevents the butter from melting prematurely and helps create those delightful pockets of steam for maximum flakiness.
