Roast in the oven for 3 hours, stopping every 30-45 minutes to give them a gentle toss for even roasting. The tomatoes are done when they start to burst, shrink in size, and appear tender and slightly caramelized. Remove trays from the oven and let cool slightly.
- Blend the Sauce: Once cooled enough to handle, peel the skin off the roasted garlic cloves (they should be very soft).
